Crystal Crab (Snow Crab)

Chaceon albus

Found along the west coast of Australia ranging from just north of Carnarvon down around the south western cape to Bremer Bay on the south coast of WA. These unique crabs are caught in depths greater than 500m which causes the distinctive white colour due to lack of light at such depths. The cold and pristine water at these depths produces crabs of exceptional flavour and they have quickly earned a reputation internationally even though only fished since 1998.

XL    over 1.5kg
L       1.2-1.5kg
M+   1.0-1.2kg
M-    0.8-1.2kg
S       under 0.8kg
